The Sensory is a chef-driven restaurant with a heavy focus on foraged foods, unique to the Bow Valley, all complimented by a huge wine list and creative cocktails. The Forest: Parmesan "soil", foraged and local greens, brunoise chamomile infused golden beet, confit wild mushroom, pine and honey vinaigrette, sifted pulverised herbs, baby radishes


 The Picnic; Seasonally inspired soup with appropriate and creative garnishes.

 The Stream: Seared Trout with fermented saskatoon berry infused cultured cream, watercress puree, pomme dauphine infused with cocoa, wild greens


The Bison: Sous vide and basted bison teres major, roasted celeriac puree, fondant potato, wild greens and birch syrup infused demi glace



 The Alpine: Charcoal infused meringue, chocolate “twigs”, spruce and coffee chocolate pave, crushed hazelnut, torched marshmallow, chocolate dirt, devil's food cake.
